Black Sesame Kinako Brown Butter Shortbread
This is a precision-baked shortbread where every ingredient has a functional role. No chill required, clean slice, sandy crumb, and a flavor base built for optional adult infusion.
The Deep Educational Core: Why This Shortbread Works
1. Brown Butter as Flavor Solvent: Butter is 80% fat, 16% water, 4% milk solids. When you brown butter to 265°F, water evaporates and milk solids undergo Maillard reaction, producing pyrazines and furanones that taste nutty and toasty. The remaining butterfat is now a more effective non-polar solvent for both fat-soluble flavor compounds from toasted sesame and, if you choose to infuse, for cannabinoids. You brown first, then cool to 85°F before creaming to maintain emulsion.
2. Black Sesame Chemistry: Black sesame is rich in sesamin and sesamol, potent antioxidants. Toasting at 325°F for 6 minutes releases sesamol from its glycoside form, intensifying aroma and preventing rapid rancidity in baked goods. Grinding 50% of the seeds while leaving 50% whole creates dual texture - paste for flavor saturation and whole seeds for bite.
3. Kinako as Functional Flour: Kinako is roasted soybean flour. It is 35% protein and contains no gluten. Substituting 15% of all-purpose flour with kinako shortens gluten strands, producing a more tender, sandy break instead of toughness. It also brings a natural roasted soybean sweetness that reduces needed sugar.
Ingredients - Measured by Weight:
115g unsalted butter, browned and cooled to 85°F, milk solids left in
40g black sesame seeds, toasted at 325°F for 6 minutes, divided
20g kinako (roasted soybean flour)
120g all-purpose flour, plus extra for dusting
50g powdered sugar
3g fine sea salt
2g vanilla bean paste
For optional infused version: use a homogenized, lab-tested butter or oil infusion equivalent to the 115g fat, and reduce total fat by that exact amount to maintain dough hydration. Do not add raw flower.
Equipment:
Small light-colored saucepan, spice grinder or mortar and pestle, stand mixer with paddle, 8x8 inch baking pan lined with parchment, ruler.
Method:
Brown butter to 265°F, watching for foam to subside and solids to turn deep amber. Immediately pour into a heatproof bowl including all browned solids. Cool to 85°F, about 45 minutes at room temperature. It should be soft-solid, not liquid.
Grind half the toasted black sesame (20g) to a fine meal. Leave remaining 20g whole.
Whisk together flour, kinako, powdered sugar, and salt. This dry distribution prevents kinako clumping.
Cream browned butter and vanilla paste on medium for 90 seconds until fluffy. Add dry mix and both ground and whole sesame. Mix on low until dough just forms and pulls from sides, about 45 seconds. Do not overmix or gluten will develop.
Press evenly into lined 8x8 pan to 1/2-inch thickness. Use a flat bottomed glass to level. Score into 16 rectangles with a sharp knife, then dock each rectangle twice with a fork. This allows steam to escape evenly.
Bake at 325°F on middle rack for 18-22 minutes until edges are golden brown and center is set but still pale. Shortbread does not brown heavily due to kinako. Cool 10 minutes, then re-cut along score lines while warm. Cool completely.
Decarboxylation, Potency, and Safety Education:
If making an adult 21+ version where legal, decarboxylation must be done separately before baking. THCA converts to THC via decarboxylation with heat, losing CO2. The conversion factor 0.877 accounts for molecular weight loss. Baking at 325°F for 20 minutes is insufficient for full decarboxylation in dough, which is why infusion must be decarboxylated beforehand and incorporated into the fat.
Calculate: (grams of input x THC% x 1000 x 0.877) = total mg. Divide by 16 pieces for mg per piece. Because fat distribution is critical, weigh dough and divide by exact piece count. Effects from edibles take 60-120 minutes to onset. Label clearly, store in child-resistant container, refrigerate up to 7 days or freeze up to 60 days.
Storage and Texture Science:
Shortbread stales via starch retrogradation, not moisture loss. Storing airtight at room temperature for 24 hours actually improves flavor as brown butter notes bloom. For longer storage, freeze baked cookies with parchment between layers.
