There is a sound that tells you a potsticker is perfect — the sizzle-hiss as the dumpling bottoms fry to a deep golden lace in the pan. Now imagine that crunch carrying a slow-building, precisely dosed warmth, with a spoonful of homemade chili crisp for company. These are not weeknight dumplings. These are event dumplings.
The infusion here lives in the chili crisp dipping oil, not the filling — which means the pork stays juicy and clean-tasting, and every diner controls their dose by how much crisp they spoon on. Smart, delicious, and exactly how infused entertaining should work.
Why It Works
Potstickers use the classic fry-steam-fry method: sear the bottoms, steam the tops, then re-crisp. The filling cooks gently inside while the exterior goes shatteringly crisp. By keeping the infusion in the finishing oil, we dodge the two great enemies of infused cooking — high heat destroying cannabinoids, and herbal flavor fighting the filling. The chili crisp's toasted aromatics also happen to be the perfect camouflage for any residual herbal notes. This recipe is engineered, not improvised.
๐ฅ Decarboxylation
- Temperature: 230°F
- Time: 40 minutes
- Cannabis: 3.5 grams of flower
Steps:
- Preheat oven to 230°F. Line a baking sheet with parchment.
- Break flower into pea-sized pieces and spread in an even layer. Cover loosely with foil.
- Bake 40 minutes, shaking gently once halfway through.
- Cool completely before infusing.
๐งช Infused Chili Crisp Oil
- Method: Low-heat infusion, then aromatics bloom
- Base: 1 cup neutral oil (grapeseed or light peanut)
- Temperature: 170–180°F for infusion; 250°F for the chili pour
- Time: 2 hours infusion + 15 minutes assembly
- Yield: ~1 cup chili crisp
- Storage: Sealed jar, cool dark pantry, 3 months (refrigerate for 6)
Steps:
- Combine decarbed cannabis and 1 cup neutral oil in a mason jar. Water-bath at 170–180°F for 2 hours, shaking every 30 minutes. Strain through cheesecloth, then a coffee filter.
- In a heatproof bowl, combine: ½ cup chili flakes, 2 tbsp Szechuan peppercorns (crushed), 3 tbsp toasted sesame seeds, 1 tbsp sugar, 1 tsp salt.
- Heat the infused oil to 250°F — no hotter, or you'll degrade the cannabinoids you just worked for.
- Pour the hot oil over the chili mixture. It will bubble furiously. Stir, then add 2 tbsp soy sauce and 1 tsp black vinegar once the bubbling settles.
- Cool, jar, and label with potency.
Dosing math: 3.5g of 20% THC flower ≈ 700mg; at ~80% efficiency ≈ 560mg per cup of chili crisp. At 48 teaspoons per cup, that's roughly 12mg per teaspoon. A modest spoonful per potsticker keeps each dumpling in the 3–5mg range.
๐ Potstickers (Makes ~24)
Filling:
- 1 lb ground pork (or finely chopped shiitake + cabbage for vegetarian)
- 2 cups napa cabbage, minced and squeezed dry
- 3 scallions, thinly sliced
- 1 tbsp grated ginger, 2 cloves garlic (minced)
- 2 tbsp soy sauce, 1 tbsp Shaoxing wine, 1 tsp sesame oil, ½ tsp white pepper
Wrapper & cooking:
- 24 round dumpling wrappers, small bowl of water
- 3 tbsp neutral (non-infused) oil for frying
Folding:
- Place 1 tablespoon of filling in the center of a wrapper. Moisten the edge with water.
- Fold in half and pleat one side — 5 to 6 pleats, pressing firmly to seal. Flat bottom, crescent top.
- Stand them upright on a floured tray. They should look like little golden ingots waiting to happen.
Fry-steam-fry:
- Heat 1 tbsp oil in a nonstick skillet over medium-high. Arrange potstickers flat-side down, not touching.
- Fry 2–3 minutes until bottoms are deep golden.
- Pour in ⅓ cup water and slam the lid on. Steam 5–6 minutes until wrappers turn translucent.
- Uncover, let remaining water evaporate, and fry 1–2 more minutes to re-crisp the bottoms.
- Serve immediately with the infused chili crisp on the side — never tossed in the pan.
๐งฌ Terpene Pairing
- Primary Terpene: Caryophyllene
- Flavor Profile: Peppery, warm, spicy
- Why It Works: Caryophyllene is the pepper in your peppercorns — it lives in the Szechuan peppercorns and chili flakes already, so a caryophyllene-rich strain folds into the chili crisp like it was born there.
- Complementary Terpenes: Myrcene (earthy depth with the pork), limonene (a squeeze of lime over the finished plate wakes everything up)
๐ฑ Strain Suggestions
- Girl Scout Cookies (Hybrid, ~22% THC) — Caryophyllene, limonene. Sweet dough, mint, pepper. The peppery backbone was made for chili crisp.
- Sour Diesel (Sativa, ~20% THC) — Myrcene, limonene, pinene. Diesel, citrus, pine. Cuts through the richness of the pork like a squeeze of citrus.
- Bubba Kush (Indica, ~19% THC) — Myrcene, caryophyllene. Earth, coffee, spice. For the late-night, low-and-slow dumpling session.
๐ Dosage
- THC per serving: ~3–5mg per potsticker (with a teaspoon of chili crisp)
- Onset: 45–90 minutes
- Duration: 4–6 hours
Start with one serving. Wait 90 minutes before consuming more. Effects vary by individual tolerance, metabolism, and consumption method. For adults 21+ only. Consume responsibly and in accordance with local laws.
๐ฅ Chef Smoke's Dumpling Rule: “Infuse the condiment, never the filling. The filling gets blasted with pan heat that murders cannabinoids and the dose becomes a rumor. The chili crisp on the side? That's dosed, deliberate, and every guest seasons to their own courage.”
