Kouign-amann is Brittany's answer to the croissant's polite restraint: laminated dough folded with an obscene amount of butter and sugar, baked at 425°F until the sugar caramelizes into a shattering amber shell. It is, by weight, one of the most butter-dense pastries on earth — and every gram of that butter goes through an oven no cannabinoid should ever meet. So the pastry bakes clean, all crunch and caramel, magnificent and undosed. The dose waits for the salted-caramel drizzle: sugar, cream, and dosed butter melted off the heat, spooned over each pastry after the bake, counted by the tablespoon. The layers are the theater. The caramel is the ledger.
🥐 The Technique: Laminate Clean, Bake Hot, Drizzle Counted
- The lamination is built clean: A simple detrempe folded around a slab of butter and sugar, given three letter-folds with rests between. The butter inside these folds hits 425°F in the oven — that is a cremation temperature for THC, and the sugar caramelizing around it makes the math doubly hopeless. Laminate clean, always.
- The bake is a no-dose zone: Shaped in muffin tins, proofed, baked at 425°F for 25–30 minutes until deeply caramelized. The sugar shell that makes kouign-amann legendary is built at temperatures that convert THC toward CBN and flatten every terpene. The oven is for pastry. Nothing dosed goes in.
- The caramel is the one counted step: Sugar melted to amber, cream whisked in, the pan off the heat entirely. Rest until below 200°F, then melt in the dosed butter until the caramel turns glossy and pourable. The drizzle is portioned by the tablespoon — one tablespoon per pastry, eight pastries, eight identical doses.
- The sugar's camouflage: Caramelized sugar is one of the great cannabis masks in the dessert kitchen — bitter-sweet, assertive, and loud enough to bury any herbal edge. The dose disappears into the amber the way the butter disappeared into the layers.
🧈 Decarb & Infusion
- Decarb: 7g ground flower, sealed mason jar, 240°F (115°C) for 40 minutes. Cool completely before opening.
- Infusion method: Stovetop butter — 1 cup (227g) unsalted butter + decarbed flower, 180–200°F for 2 hours, gentle bubbles only, no browning. Strain through cheesecloth. Yield: ~200g finished cannabutter at ~8.1mg/g.
- Storage: Refrigerate airtight up to 3 weeks; freeze up to 6 months. Label it dosed and dated.
- Dosing math for this batch: 15g dosed butter at ~8.1mg/g ≈ ~122mg total, melted into the finished salted caramel off the heat. 8 pastries = ~15mg per pastry.
🍽️ The Recipe: Kouign-Amann, Counted
- The dough (clean): 2¼ cups bread flour, 1 tbsp sugar, 1 tsp salt, 2¼ tsp instant yeast, ¾ cup warm water. Knead 8 minutes, rise 1 hour until doubled.
- The lamination (clean): Roll the dough to a 12-inch square. Dot with 1 cup cold clean butter cut in pats and sprinkle with ¾ cup sugar. Letter-fold, rest 30 minutes chilled; repeat for three folds total, sugaring each fold. The dough will weep and fight you — that is the sugar doing its job.
- The shape and bake (clean): Cut into 8 squares, fold the corners to the center, press into a buttered-and-sugared muffin tin. Proof 45 minutes. Bake at 425°F for 25–30 minutes until deeply golden and caramelized. Unmold immediately onto a rack — the sugar sets like glass if you wait.
- The caramel (counted): ¾ cup sugar melted to deep amber, whisk in ½ cup warm cream (it will seize and then surrender), then 2 tbsp clean butter and a fat pinch of flaky salt. Pan off the heat, rest 5 minutes until below 200°F, melt in 15g dosed butter until glossy.
- The plate: One tablespoon of dosed caramel drizzled over each warm pastry — count the spoonfuls out loud if you have to. Serve warm; the layers shatter, the caramel pools, nobody suspects a thing.
- The one-caramel rule: One dosed caramel, in one pitcher, eight counted spoonfuls. Do not set out a second, undosed caramel — two pitchers on one table is a dosing accident in a Breton costume.
🧬 Terpene Pairing
- Primary terpenes: Limonene and linalool (butter, caramelized sugar, vanilla warmth) with a myrcene base — the pastry is a warm, sweet, creamy chord.
- How to use it: Dessert strains with vanilla-cream and sweet-dough depth melt into the caramel — the dose tastes like the pastry got richer, not greener. Avoid earthy, skunky, or diesel strains; against caramelized sugar they read as burnt in a way that ruins the illusion.
- Caramel's masking power: Burnt sugar is the loudest flavor in the dessert kitchen — it flattens cannabis-green notes the way brown butter does in savory cooking. This caramel is a forgiving carrier for sweeter flower.
🌱 Strain Suggestions
- Wedding Cake (Hybrid, ~22% THC) — Caryophyllene, limonene. Vanilla-dough sweetness built for caramel.
- Gelato (Hybrid, ~21% THC) — Caryophyllene, limonene. Creamy dessert depth that leans into the drizzle.
- Sunset Sherbet (Hybrid, ~19% THC) — Caryophyllene, limonene. Sweet-fruit warmth softened by the butter layers.
📏 Dosage
- Per serving: ~15mg per pastry (8 pastries, one counted tablespoon of dosed caramel each)
- The spoon rule: One tablespoon per pastry — the count was built for the spoon, not the swirl. Extra drizzle is an extra dose.
- Onset: 45–75 minutes — a butter-and-sugar vehicle absorbs faster than a heavy meal, but the richness still slows it; plan accordingly

🥐 Chef Smoke's Lamination Rule: "The folds get the butter and the fire — three turns, 425°F, sugar turned to glass. The dose gets none of that. The dose waits in the caramel, off the heat, below 200°F, melted in glossy and spooned over warm pastry one counted tablespoon at a time. Lamination is architecture. Caramel is the ledger. Build the building clean, and sign it at the end."
