Cannabis Deviled Eggs



These luxurious deviled eggs feature silky cannabis-infused mayo for an elevated party bite that disappears fast.

Ingredients

6 large eggs

3 tbsp cannabis-infused mayonnaise

1 tsp Dijon mustard

1 tsp fresh lemon juice

Paprika and chives for garnish

Caviar or salmon roe optional

Instructions

Boil eggs for 10 minutes, cool in ice bath, peel and halve.

Remove yolks and mash with infused mayo, mustard, lemon juice, salt and pepper until smooth.

Pipe filling back into whites using a ziplock bag with corner snipped.

Sprinkle with paprika and chives, top with caviar if using.

Decarboxylation

Temperature 245°F / 118°C. Time 35 minutes. Cannabis 3.5g. Standard decarb in oven. Flower will be used to infuse the mayonnaise.

Infusion

Method Infused Mayonnaise. Base mayonnaise total 1/2 cup. Temperature 160°F. Time 25 minutes. Yield 1/2 cup. Storage refrigerate up to 1 week.

Warm mayonnaise gently in double boiler to 160°F.

Stir in decarbed cannabis and maintain temperature for 25 minutes; strain if needed.
