3 Warm over low heat using a double boiler until mixture reaches 160F. Maintain temperature, do not exceed 160F.
4 Simmer gently at 160F for 45 minutes, stirring occasionally.
5 Remove from heat. Strain through a fine mesh strainer or cheesecloth into a clean container.
6 Use the warm infused oil immediately in the ganache (blend into warm cream).

6 Pour into pan: Line a small loaf pan or dish with parchment paper. Pour the fudge mixture in and spread evenly. Chill 2 hours until firm. Cut into squares. Dust with flaky sea salt. Makes 12.
