A schnitzel hits a shallow pan of oil at 350°F and stays there for six to eight minutes, breading going deep golden while the interior climbs to a safe 165°F. That is a hostile environment for THC — sustained high heat, no way to verify what survives, and a breaded crust that would carry the dose unevenly anyway. So the schnitzel fries clean and golden in undosed oil, and the dose arrives afterward, at the table, riding in a lemon-caper brown butter that's built in two stages: brown the undosed butter for the nutty flavor (browning pushes past 250°F — exactly why the dose waits), then melt the measured dosed butter in off the heat, with capers, lemon, and parsley folded through. Crisp cutlet, dosed finish, honest math.
🍗 The Science: The Fryer Is a No-Dose Zone
Three reasons the dose never goes near the pan:
- Sustained high heat. Shallow-frying runs 350–375°F for the better part of ten minutes per batch. THC degrades meaningfully above roughly 250°F with sustained exposure — a frying pan is not a gray area, it's a crematorium for cannabinoids.
- Uneven carrier. Dosed fat in a breading mixture would distribute through the crust unpredictably — thick edges, thin edges, breading that falls off in the pan. You'd be dosing the frying oil, the paper towels, and the pan. Not the diner.
- The brown butter problem. Real brown butter — the nutty, toasty kind — requires pushing butter solids past 250°F. That's flavor chemistry the dose cannot survive. So you brown undosed butter for flavor, pull it off the heat, let it cool below the danger zone, and melt the dosed butter into the warm (not hot) base. Two butters, two jobs, one sauce.
🧈 The Infusion: All-Purpose Dosed Butter
This is the house dosed butter — the same jar that finishes vegetables, melts over steak, and now folds into brown butter. One cup, one math, endless finishes.
- Decarb: 7g ground flower, sealed mason jar, 240°F (115°C) for 40 minutes. Cool before opening.
- Method: Melt 1 cup (227g / 2 sticks) unsalted butter and warm to 160–180°F. Add the decarbed flower, hold low for 2 hours. Strain through cheesecloth, squeeze gently, jar it. Solid at room temp, liquid gold when warm.
- Dosing math: 7g at 20% THC = 7000mg × 0.20 = 1400mg THCA × 0.877 = ~1228mg THC × 0.75 efficiency ≈ ~921mg per 227g butter → ~4.1mg per gram.
- Yield: ~215g. Storage: Fridge 6 weeks, freezer 6 months. Label: strain, date, mg/g.
🍗 The Recipe: Chicken Schnitzel (4 servings)
- 4 chicken breasts (~180g each), pounded to an even ½-inch — even thickness is the whole game; thin spots burn, thick spots stay raw
- Salt and freshly cracked black pepper
- ½ cup flour, 2 eggs beaten with 1 tbsp water, 1½ cups panko mixed with ½ cup fine dry breadcrumbs
- Undosed neutral oil (grapeseed or avocado) for shallow-frying — enough for ¼ inch in the pan
- Lemon wedges, for the table (undosed, obviously — the lemon is garnish, the butter is the dose)
Method:
- Bread: Season the pounded cutlets with salt and pepper. Flour, shake off the excess; egg wash, let the excess drip; crumb mixture, pressed on firmly. Rest the breaded cutlets 10 minutes on a rack — the coating adheres instead of sliding off in the pan.
- Fry (undosed): Heat the neutral oil to 350°F. The pan is a no-dose zone — nothing dosed comes within a foot of it. Fry two cutlets at a time, 3–4 minutes per side, until deep golden and 165°F inside. Drain on a rack over a sheet pan (not paper towels — steam makes the crust soggy), salt immediately.
- Hold warm: Keep the finished cutlets in a 200°F oven while the second batch fries. Crisp stays crisp; the dose is still waiting its turn.
🍋 The Dosed Lemon-Caper Brown Butter (4 servings)
- 3 tbsp undosed butter — this is the browning butter
- 2 tbsp (30g) dosed butter — ~123mg THC for the batch
- 1 tbsp capers, drained and roughly chopped
- 1 tbsp fresh lemon juice + 1 tsp lemon zest
- 2 tbsp flat-leaf parsley, chopped; flaky salt
Method:
- Brown (undosed): Melt the 3 tbsp undosed butter in a small pan over medium heat. It will foam, then the foam will subside and the milk solids will toast to amber with a nutty smell — 3–4 minutes. This pan is past 250°F. The dosed butter is still in the fridge. Good.
- Cool it down: Pull the pan off the heat. Wait a full 60 seconds — swirl once. You want the butter warm and fragrant, not sizzling. Below ~150°F is the target; when you can hold your hand comfortably over the pan, you're there.
- The dosed fold: Add the 2 tbsp dosed butter and stir until it melts completely into the warm brown butter. Then the capers, lemon juice, zest, and parsley. Taste — it should be nutty, briny, bright, with a faint herbal hum underneath that nobody at the table can identify. That's the strain talking through the citrus.
- Serve: Spoon generously over the hot schnitzel at the table — ~123mg THC across all four plates. Lemon wedges alongside for squeezing.
📐 Dosing Math
- Dosed butter: 30g × 4.1mg/g ≈ ~123mg THC across the full batch of sauce
- 4 servings → ~31mg THC per serving
- Halved option: 1 tbsp (15g) dosed butter ≈ ~62mg total → ~15mg per serving — spoon half the sauce per plate and keep the rest labeled for tomorrow
- The schnitzel carries zero. The butter carries everything. If 31mg is more than you want, the answer is less butter, not a smaller cutlet.
🧬 Terpene Pairing
- Primary terpenes: Limonene (lemon zest and juice want a limonene-forward strain the way a duet wants a second voice) + caryophyllene (the peppery snap of capers and the toasted nuttiness of brown butter both echo caryophyllene's spice) + myrcene (the savory, golden-fried base)
- How to use it: Brown butter is a flavor amplifier — it will carry the strain's terpenes straight to the front of the palate. Choose a strain you'd be happy tasting clearly. Citrus-forward, clean-finishing, no harsh edges.
- What to avoid: Anything with a heavy skunk or fuel note — brown butter has nowhere to hide it, and lemon makes harshness louder, not quieter.
🌱 Strain Suggestions
- Lemon Haze (Sativa, ~20% THC) — Limonene, terpinolene. The obvious pairing and the correct one — lemon on lemon, with the terpinolene adding a floral lift.
- Super Silver Haze (Sativa, ~20% THC) — Limonene, myrcene. Bright up front, grounded underneath — built for a rich butter sauce.
- Durban Poison (Sativa, ~20% THC) — Terpinolene, myrcene. Anise-tinged brightness that plays surprisingly well with capers.
- Pineapple Express (Hybrid, ~20% THC) — Caryophyllene, limonene, myrcene. Tropical-citrus with a peppery backbone — the caper-and-brown-butter strain.
📏 Dosage
- Per serving (full butter): ~31mg THC — or ~15mg per serving with the halved butter
- Onset: 45–90 minutes — butter on hot protein, with a full schnitzel behind it, is a slow and steady ride
- The butter rule: The pan that fried the schnitzel and the butter that doses it never meet. Brown undosed, cool it down, fold dosed in off the heat. Anyone who tells you to "just brown the dosed butter" is telling you to burn money and serve a mystery dose.
Start with one serving. Wait 90 minutes before even thinking about a second. For adults 21+ only. Consume responsibly and in accordance with local laws.
🍋 Chef Smoke's Schnitzel Rule: "The fryer is a no-dose zone — say it like a kitchen rule, because it is one. Crisp the cutlet clean, brown the butter bold, and let the dose arrive last, off the heat, measured to the gram. Anybody can fry a schnitzel. The discipline is in what you refuse to put in the pan."
