Infused Xiao Long Bao — Soup Dumplings with a Dosed Dipping Sauce

There is a wrong way to make an infused soup dumpling, and it's the obvious one: putting the dose inside. A xiao long bao steams for eight to nine minutes at a full rolling 212°F, wrapped around a pocket of aspic that liquefies into soup — and THC, a fat-soluble molecule, has no lipid carrier in that lean pork-and-aspic filling to ride in. Whatever dose you put inside would distribute unevenly into the soup liquid, cook under moist heat you can't fully verify, and land in each dumpling in an amount nobody could measure or repeat. You cannot dose what you cannot measure. So the dumpling stays clean — pork, ginger, wrapper, steam, honest — and the ENTIRE dose lives in the one place you can measure down to the gram: a room-temperature black-vinegar–ginger dipping sauce, portioned per diner, with the measured dosed oil whisked in. Clean dumplings, counted sauce. That's the only math a soup dumpling allows.

🥟 The Science: Why the Dose Stays Out of the Dumpling

Three problems with dosing the filling, all of them fatal to honest math:

  1. No carrier, no dose. THC is fat-soluble. A xiao long bao filling is lean ground pork bound with gelatinized stock — mostly water and protein, not fat. The dose has nothing to dissolve into, so it can't distribute evenly. One dumpling might carry 20mg, the next one 2mg. That's not a recipe, that's a lottery.
  2. Unverifiable heat. Eight to nine minutes of live steam is not the kind of gentle, measured 160–180°F infusion window this blog uses. Sustained moist heat at 212°F degrades cannabinoids unpredictably — and "unpredictably" is the word that kills dosing math.
  3. The soup problem. The whole point of the dumpling is the burst of soup when you bite it. That soup is water-phase. Dosed fat won't stay in it, and undosed soup plus a mystery dumpling equals a mystery dose.

The honest architecture: dumplings cooked completely undosed, and a dipping sauce that carries 100% of the dose — divided into individual bowls at the table so every diner knows exactly what their bowl holds.

🫙 The Infusion: A Neutral Dosed Dipping Oil

The sauce wants a neutral oil — refined avocado or grapeseed — so the black vinegar and ginger lead and the oil disappears. A toasted sesame oil would fight the vinegar; keep the toasted sesame as an undosed accent in the sauce itself.

  • Decarb: 7g ground flower, sealed mason jar, 240°F (115°C) for 40 minutes. Cool before opening.
  • Method: Warm 1 cup (218g) refined avocado oil to 160–180°F. Add the decarbed flower, hold low for 2 hours. Strain through cheesecloth, squeeze gently, jar it. Neutral going in, neutral coming out — that's the job.
  • Dosing math: 7g at 20% THC = 7000mg × 0.20 = 1400mg THCA × 0.877 = ~1228mg THC × 0.75 efficiency ≈ ~921mg per 218g oil → ~4.2mg per gram.
  • Yield: ~205g. Storage: Cool dark pantry 8 weeks. Label: strain, date, mg/g.

🥩 The Recipe: Pork-and-Ginger Xiao Long Bao (makes ~24)

Wrappers:

  • 200g all-purpose flour, 105g just-boiled water, pinch of salt
  • Mix, knead 8–10 minutes until smooth and satiny, rest 1 hour under a damp towel

Aspic (the soup — make the night before):

  • 250ml rich chicken or pork stock, reduced to a lip-sticking glaze
  • 2½ tsp powdered gelatin bloomed in 3 tbsp cold water
  • Stir the bloomed gelatin into the hot stock, pour into a shallow dish, chill overnight until firm. This is undosed. The steam zone is a no-dose zone, remember.

Filling:

  • 300g ground pork (70/30 — fat is flavor here, not a dosing vehicle)
  • 30g fresh ginger, minced to a paste
  • 2 scallions, minced fine
  • 1 tbsp light soy sauce, 1 tbsp Shaoxing wine, 1 tsp sugar, ½ tsp white pepper, 1 tsp toasted sesame oil (undosed), ¾ tsp salt
  • 150g of the set aspic, cut into 5mm cubes

Method:

  1. Mix the filling: Combine pork, ginger, scallions, soy, Shaoxing, sugar, white pepper, sesame oil, and salt. Stir vigorously in one direction for 3–4 minutes until tacky and cohesive. Fold in the aspic cubes last, gently. Chill 30 minutes.
  2. Roll the wrappers: Divide the dough into 24 pieces (~13g each). Roll each into a thin round, 8–9cm across, edges thinner than the center — the pleats need thin edges to seal.
  3. Pleat: Place 1 tablespoon of filling in the center. Pleat the edge 16–18 times around, gathering toward the center, then pinch and twist to seal. The twist is the signature — don't cut it off until after steaming, it keeps the seal honest.
  4. Steam (undosed): Line a bamboo steamer with cabbage leaves or perforated parchment. Boiling water underneath, dumplings spaced 2cm apart, lid on, 8–9 minutes. Rest 2 minutes before lifting the lid — the rush of steam will scald you and, more importantly, the dumplings need a moment to set.
  5. Serve immediately. These wait for no one. Each dumpling is completely undosed — the dose is at the table, in the sauce, measured per bowl.

🥣 The Dosed Dipping Sauce: Black-Vinegar–Ginger (6 dipping bowls)

This is the entire dose of the dish. Mix the base, whisk in the measured dosed oil, divide evenly — every bowl identical, every bowl counted.

  • 6 tbsp Chinkiang black vinegar
  • 2 tbsp light soy sauce
  • 3 tbsp fresh ginger, cut into fine matchsticks
  • 1 tbsp toasted sesame oil (undosed)
  • 1 tsp sugar
  • 2 tbsp (25g) dosed neutral oil — ~105mg THC for the full batch of sauce
  • Optional: thin rings of red chili, undosed, for the brave

Method:

  1. Whisk the vinegar, soy, ginger, undosed sesame oil, and sugar until the sugar dissolves.
  2. Whisk in the 2 tbsp dosed oil until the sauce turns lightly glossy and emulsified. The dose is now fully incorporated — it cannot be separated out, which is exactly why you measured it before it went in.
  3. Divide into 6 small dipping bowls, evenly. Each bowl holds ~17mg THC. Diners dip their (undosed) dumplings into their own counted bowl. Nobody shares a sauce bowl — share dumplings freely, guard the bowls.

📐 Dosing Math

  • Dosed oil: 25g × 4.2mg/g ≈ ~105mg THC across the full batch of sauce
  • 6 dipping bowls → ~17mg THC per bowl
  • Halved option: 1 tbsp (12.5g) dosed oil ≈ ~52mg total → ~9mg per bowl — the right call for a first run of this dish
  • The dumplings carry zero. The bowl carries everything. Pace the bowl, not the dumpling.

🧬 Terpene Pairing

  • Primary terpenes: Limonene (ginger and black vinegar both lean bright — a limonene-forward strain harmonizes instead of fighting) + myrcene (the savory pork base wants myrcene's earthiness) + caryophyllene (white pepper's bite echoes caryophyllene's pepper note)
  • How to use it: Because the dosed oil is neutral and the sauce is acidic, the strain's terpenes actually show through — choose a clean, citrus-forward profile. The vinegar will punish a harsh, fuel-heavy strain; the acid amplifies everything.
  • What to avoid: Diesel/fuel-forward profiles — they turn metallic against black vinegar. Keep it citrus, keep it clean.

🌱 Strain Suggestions

  • Super Lemon Haze (Sativa, ~20% THC) — Limonene, terpinolene. Bright citrus that stands up to the vinegar without getting lost in it.
  • Tangie (Sativa, ~21% THC) — Limonene, myrcene. A citrus echo with the ginger and enough body for the pork.
  • Blue Dream (Hybrid, ~20% THC) — Myrcene, pinene. The neutral-friendly default — mild enough to let the sauce be the star.
  • Jack Herer (Sativa, ~20% THC) — Terpinolene, pinene. A peppery lift that rides the white pepper in the filling straight into the dip.

📏 Dosage

  • Per dipping bowl: ~17mg THC — or ~9mg per bowl with the halved oil
  • Onset: 45–90 minutes — oil in a vinegar emulsion on a full stomach of dumplings moves at a steady, honest pace
  • The bowl rule: The dumplings are free; the bowl is the dose. If you finish your dumplings, you're done eating — don't pour a second bowl "to use up the sauce." The sauce was never a condiment. It was the whole point, measured.

Start with one serving. Wait 90 minutes before even thinking about a second. For adults 21+ only. Consume responsibly and in accordance with local laws.

🥟 Chef Smoke's Soup Dumpling Rule: "You can't dose what you can't measure, and you can't measure soup trapped inside a pleated wrapper. So keep the dumpling honest — pork, ginger, steam, eighteen pleats — and put the dose in the one place you can measure down to the gram: the little bowl of black vinegar on the side. Clean dumplings, counted sauce. That is the only math a soup dumpling allows."
