The Five French Mother Sauces, Infused

Every sauce in classical French cooking descends from five mothers — béchamel, velouté, espagnole, hollandaise, and tomate. Learn these five and you can improvise a hundred daughters: mornay, suprême, bordelaise, béarnaise, and beyond. And here is the thing nobody tells you in culinary school: four of the five are built on fat, which makes them the single best infusion vehicles in the savory kitchen. Cannabinoids bind to fat the way gossip binds to a dinner party — completely, and without being asked twice.

This is the master guide: each mother sauce, the correct infusion point, the temperature ceiling that keeps your THC intact, and honest dosing math. Master the mothers and every sauce you ever make can carry a precise, deliberate dose.

Why It Works

Infusion loves fat and fears two things: high heat and water. The mother sauces are almost pure fat emulsions or fat-thickened liquids — butter in béchamel and hollandaise, roux-bound stock in velouté and espagnole, olive oil in tomate. Because the infusion goes into the fat before the sauce is built, the cannabinoids distribute evenly through every milliliter, and the sauce's own cooking temperatures (all below 200°F once assembled) never threaten them. The one rule: infuse the fat first, build the sauce second, and never boil a finished infused sauce.

🔥 Decarboxylation (Master Batch)

  • Temperature: 230°F
  • Time: 40 minutes
  • Cannabis: 7 grams of flower (makes enough infused fat for all five sauces across a dinner party)

Steps:

  1. Preheat oven to 230°F. Line a baking sheet with parchment.
  2. Break flower into pea-sized pieces and spread in an even layer. Cover loosely with foil.
  3. Bake 40 minutes, shaking gently once halfway through. Cool completely.
  4. Split the decarbed flower: 3.5g for 1 cup butter, 3.5g for 1 cup olive oil. Infuse each at 170–180°F for 2 hours, strain, label.

Dosing math: 3.5g of 20% THC flower ≈ 700mg; at ~80% efficiency ≈ 560mg per cup of infused fat. That's ~35mg per tablespoon. Every sauce below is portioned from this master math — scale the infused fat up or down against plain fat to hit your target.

1. Béchamel — The White Mother

Infusion point: Infused butter in the roux.

Build: 2 tbsp infused butter + 2 tbsp flour → blond roux, 2 minutes. Whisk in 2 cups warm milk. Simmer (never boil) 5 minutes until it coats a spoon. Salt, white pepper, nutmeg.

Dose: 2 tbsp infused butter ≈ 70mg per 2-cup batch → eight ¼-cup servings ≈ 9mg each.

Daughter to try: Mornay — add gruyère and parmesan. The cheese's fat grabs any stray cannabinoids and the whole thing becomes dangerously smooth.

2. Velouté — The Blond Mother

Infusion point: Infused butter in the roux; finish with a plain-cream liaison.

Build: 2 tbsp infused butter + 2 tbsp flour → blond roux. Whisk in 2 cups warm light stock (chicken or veal). Simmer 20 minutes, skimming, until silky. Finish with ¼ cup cream (plain) off the heat.

Dose: Same as béchamel ≈ 9mg per ¼-cup serving.

Chef's note: Velouté is the mother most chefs reach for first — it takes on the personality of whatever stock you use. A mushroom-stock velouté with infused butter is one of the great quiet luxuries.

3. Espagnole — The Brown Mother

Infusion point: Infused butter in the brown roux; the long simmer stays under a bare bubble.

Build: 2 tbsp infused butter + 2 tbsp flour → cook to a deep brown roux, 8–10 minutes, stirring constantly. Add 2 cups brown stock, 2 tbsp tomato paste, a mirepoix sachet. Bare simmer 45 minutes, strain.

Dose: ≈ 9mg per ¼-cup serving.

Temperature warning: A rolling boil will not destroy your THC in 45 minutes, but it will dull it and wreck the sauce's texture. Keep it at the laziest bubble you can manage — espagnole rewards patience anyway.

4. Hollandaise — The Emulsion Mother

Infusion point: Infused clarified butter as the emulsion fat.

Build: Melt ½ cup infused butter and let the milk solids settle; pour off the clear fat. Whisk 3 yolks with 1 tbsp lemon juice over gentle heat until ribbon-thick, then drizzle in the warm infused clarified butter. Salt, cayenne.

Dose: ½ cup infused butter ≈ 280mg per batch → eight 2-tbsp servings ≈ 35mg each — this one runs hot. Cut it 50/50 with plain clarified butter for a civilized ~17mg, or serve over asparagus in honest 1-tbsp portions (~17mg).

Chef's note: Hollandaise never exceeds 160°F if you're doing it right, which makes it the safest mother for infusion. It is also the fastest to break if you look at it wrong. Whisk like you mean it.

5. Tomate — The Red Mother

Infusion point: Infused olive oil to bloom the aromatics.

Build: Sweat onion, carrot, and garlic in 2 tbsp infused olive oil until soft. Add 2 tbsp tomato paste; caramelize 3 minutes. Add a 28-oz can of crushed tomatoes, thyme, bay. Simmer 30 minutes. Blend smooth, finish with a knob of plain butter.

Dose: 2 tbsp infused oil ≈ 70mg per batch → eight ¼-cup servings ≈ 9mg each.

Daughter to try: A spoonful of this over infused polenta is a two-mother evening. Pace yourself.

🧬 Terpene Pairing

  • Primary Terpene: Pinene
  • Flavor Profile: Pine, rosemary, fresh herbs
  • Why It Works: Bay leaf, thyme, and rosemary — the holy trinity of sauce aromatics — are pinene powerhouses. A pinene-rich strain slots into the mother sauces' herbal backbone without announcing itself.
  • Complementary Terpenes: Caryophyllene (pepper and warmth for the espagnole and tomate), myrcene (earthy roundness that loves brown butter)

🌱 Strain Suggestions

  • Jack Herer (Sativa, ~22% THC) — Terpinolene, pinene, caryophyllene. Pine, citrus, spice. The classic sauce strain.
  • Blue Dream (Hybrid, ~20% THC) — Myrcene, pinene. Berry, pine, sweet. Beautiful in the velouté.
  • OG Kush (Hybrid, ~23% THC) — Myrcene, caryophyllene, limonene. Earth, pine, citrus. Built for the espagnole.

📏 Dosage

  • THC per serving: ~9mg per ¼-cup serving (béchamel, velouté, espagnole, tomate); hollandaise ~17–35mg depending on your cut — read that section twice
  • Onset: 45–90 minutes
  • Duration: 4–6 hours

Start with one serving. Wait 90 minutes before consuming more. Effects vary by individual tolerance, metabolism, and consumption method. For adults 21+ only. Consume responsibly and in accordance with local laws.

🇫🇷 Chef Smoke's Sauce Rule: "Infuse the fat, build the sauce, never boil the finish. The mother sauces are fat-first by design, which means they're infusion-first by destiny. And respect the hollandaise — it is the only mother that will break your sauce and your evening if you dose it like the others."
