Guacamole is one of the oldest continuously made dishes in the Americas — the Aztecs were mashing āhuacamolli in a molcajete centuries before anyone thought to write a recipe down. Done right it's a study in restraint: ripe avocado, lime, salt, maybe onion and chile, and nothing that gets in the way. Done wrong it's brown soup. The whole game is ripe fruit, acid discipline, and serving it the minute it's made.
Here's the beautiful part: guacamole is already a cold dish, which makes it one of the safest vehicles in the entire infused kitchen. The avocado never sees heat, the lime oil gets folded in at the very end at room temperature, and the dose distributes evenly through the fat you're already eating. No hot zones, no guesswork — just measured oil, folded cold.
🔥 The Infusion: Dosed Lime Oil
- Decarb: 2g ground flower, sealed mason jar, 240°F (115°C) for 40 minutes. Cool before opening.
- Method: Combine decarbed flower with 1/2 cup (120ml) avocado oil and the zest of 2 limes in a double boiler at 160–170°F (71–77°C) for 2 hours. Strain through cheesecloth.
- Dosing math: 2g at 20% THC = 400mg THCA × 0.877 = ~351mg × 0.8 ≈ ~280mg per 120ml → ~2.3mg per ml.
- Yield: ~110ml. Storage: Airtight jar, cool dark pantry up to 2 months; the lime zest makes this one best used within 6 weeks.
🍲 The Guacamole
Serves 8 (about 1/3 cup each)
- 4 ripe Hass avocados
- Juice of 2 limes, plus 1 lime cut in wedges
- 1/2 small red onion, finely diced
- 1 jalapeño, seeded and minced
- 1/2 cup chopped cilantro
- 1 1/2 tsp kosher salt
- Dosed lime oil (measured — this is the dose): 30ml, folded in last
Method:
- Halve and pit the avocados. Scoop into a bowl and mash with a fork — chunky, not smooth. Texture is the whole point.
- Fold in lime juice, red onion, jalapeño, cilantro, and salt. Taste and adjust acid and salt until it sings.
- Dose: Fold in the dosed lime oil at room temperature, mixing thoroughly so it's evenly distributed — 30ml ≈ 69mg → ~9mg per serving. Serve immediately with warm tortilla chips.
📐 Dosing Math
- Dosed lime oil ≈ 2.3mg/ml → 30ml ≈ 69mg total → ~9mg per serving
- Avocado, lime, onion, jalapeño, cilantro: all clean. Only the folded lime oil is dosed.
🧬 Terpene Pairing
- Primary: Limonene (lime juice, lime zest in the oil, cilantro)
- How to use it: Limonene is the reason this dish works as an infusion vehicle — it's already the dominant aromatic, so the dose rides inside a flavor that belongs there. Zest the limes before you juice them and use both; the zest oils in the infusion and the fresh juice in the bowl stack the same note twice.
🌱 Strain Suggestions
- Sour Diesel (sativa, ~21% THC) — limonene, beta-caryophyllene. Diesel-citrus edge that cuts through avocado richness.
- Jack Herer (sativa-leaning hybrid, ~20% THC) — terpinolene, pinene. Bright and piney, made for fresh lime.
- Super Lemon Haze (sativa-leaning hybrid, ~21% THC) — limonene, terpinolene. Pure citrus focus — the guac's best friend.
📏 Dosage
- Per serving: ~9mg THC
- Onset: 45–90 minutes — avocado fat absorbs efficiently but the serving is light
- First-timer rule: It's a dip, not a meal — which is exactly how people overdo it. Scoop a measured 1/3 cup, put the bowl across the table, and wait an hour before a second round.
