Menudo is Mexico's Sunday-morning institution: a brick-red chile broth, tender tripe, and hominy, garnished at the table with onion, cilantro, and lime, with warm tortillas on the side. It is also a pot built for a crowd, and a crowd pot is the worst place to hide a dose — nobody can measure "one ladle" precisely, and a second bowl of a dosed pot is a second dose nobody counted. So Chef Smoke cooks the menudo clean and doses the garnish. The pot stays sober for everyone at the table. The dose goes on bowl by bowl, in a chile-lime oil drizzled at the table, where every bowl carries the same number and the Sunday soup never lies to anyone.
🧈 Decarb & Infusion (The House Olive Oil)
- Decarb: 7g ground flower, spread thin on a lined sheet, 240°F (115°C) for 40 minutes, until fragrant and golden. Cool completely before handling — hot flower loses terpenes to the air.
- Infusion method: Stovetop olive oil — decarbed flower + 1 cup olive oil, 180–200°F for 2 hours, never simmering. Strain through cheesecloth, press gently. Yield: ~1 cup finished dosed olive oil.
- Storage: Refrigerate airtight up to 3 weeks, freeze up to 6 months. Label it dosed and dated — dosed oil looks exactly like regular olive oil, which is exactly why the label matters.
- Dosing math for this batch: 1 tablespoon dosed olive oil ≈ 75mg THC, 1 teaspoon ≈ 25mg. This soup doses 8 bowls with 1 tablespoon total — about 9mg per bowl.
🥘 The Technique: Menudo (8 servings, ~9mg each)
- Clean the tripe properly: Rinse 2 pounds honeycomb tripe, then simmer it in plain water with half an onion and salt for 1 hour. Drain, rinse, and cut into bite-size pieces. This step is not optional — clean tripe is the difference between menudo and a mistake.
- Build the chile broth clean: Blend 4 soaked guajillo chiles and 2 soaked ancho chiles with garlic, cumin, and oregano until smooth. Simmer the tripe in the chile broth with 2 cans hominy for 2 hours, until meltingly tender. Season with salt. Everything so far is clean — this pot is safe for every guest at the table.
- Set out the garnish bar: Diced white onion, chopped cilantro, lime wedges, dried oregano, and warm corn tortillas. The garnish bar is where menudo becomes personal — and where the dose will live.
- Dose it bowl by bowl: Ladle the menudo into 8 bowls. Drizzle each bowl with a scant 1/2 teaspoon dosed olive oil (≈ 9mg) — the same spoon, the same drizzle, every time. Let each diner finish their own bowl with onion, cilantro, and lime, never extra oil.
- Serve it counted: Announce it: ~9mg per bowl. Keep the ladle in the clean pot and the dosed oil in its own labeled bottle, far from the serving spoon. A second bowl is fine — it just gets counted like the first, or it gets no drizzle at all.
🧬 Terpene Pairing
- Primary terpenes: Beta-caryophyllene (the warm pepper of the guajillo chiles), myrcene (the soft, savory depth of the long-simmered broth), and limonene (the bright lime lift that cuts the richness).
- How to use it: A peppery, citrus-bright strain reads as one more seasoning in a chile broth. The lime already brings the high note, so the infusion blends in rather than announcing itself.
- What to avoid: Heavy, skunky profiles — they fight the fresh garnishes. Keep it peppery, herbal, and bright.
🌱 Strain Suggestions
- OG Kush — Myrcene, caryophyllene. Earthy and grounded; the chile broth's natural partner.
- Sour Diesel — Caryophyllene, limonene. Peppery and bright; the lime's best friend.
- Blue Dream — Myrcene, pinene. Soft and balanced; lets the garnish bar stay the star.
📏 Dosage
- Per serving: ~9mg THC per bowl (8 bowls, 1 tablespoon dosed oil total).
- The garnish-bar rule: The dose lives in the drizzle, not the garnish bar. Never put dosed oil in a communal squeeze bottle — a communal bottle is an uncounted dose wearing a fancy name.
- Onset: 30–90 minutes for most people. Count the whole bowl, not just the drizzle — the drizzle is only one part of the meal's math.
Start with one serving. Wait 90 minutes before even thinking about a second. For adults 21+ only. Consume responsibly and in accordance with local laws.
🥘 Chef Smoke's Menudo Rule: "The pot feeds the crowd, the drizzle feeds the count — Sunday soup should heal, never surprise."
