Tostones are the Caribbean's answer to the french fry: green plantains fried once, smashed flat, fried again until the edges shatter. The double fry is the whole trick — the first pass cooks the starch through, the smash creates surface area, the second pass turns that surface into a golden, salty crisp. They're the side dish that regularly outshines the main across Puerto Rico, Cuba, and the Dominican Republic.
Two rounds in 350°F oil means there is no version of this recipe where the plantain itself carries the dose. The tostones fry clean, get salted hot, and the infusion lives in a lime mayo whisked cold and dolloped over the top at serving. Crispy, salty, creamy, measured — and the mayo never goes near the fryer.
🔥 The Infusion: Dosed Lime Mayo
- Decarb: 2g ground flower, sealed mason jar, 240°F (115°C) for 40 minutes. Cool before opening.
- Method: Combine decarbed flower with 1/2 cup (120ml) avocado oil in a double boiler at 160–170°F (71–77°C) for 2 hours. Strain through cheesecloth.
- Dosing math: 2g at 20% THC = 400mg THCA × 0.877 = ~351mg × 0.8 ≈ ~280mg per 120ml → ~2.3mg per ml.
- Yield: ~110ml. Storage: Airtight jar, cool dark pantry up to 2 months; refrigerate to stretch it to 4.
🍲 The Tostones
Serves 8 (about 5 tostones each)
- 4 large green plantains
- Neutral oil for frying
- Coarse salt
- 1/2 cup chopped cilantro, for finishing
- Lime wedges
- Dosed lime mayo (measured — this is the dose): 1/2 cup mayonnaise, 30ml dosed avocado oil whisked in, juice of 1 lime, 1 small garlic clove grated, salt
Method:
- Peel the plantains and cut into 1 1/2-inch chunks. Fry at 350°F for 3–4 minutes until pale gold and soft. Drain.
- Smash each piece flat — a tostonera, a heavy glass, the bottom of a mug, whatever you've got — to about 1/4 inch thick.
- Fry again at 375°F for 2–3 minutes until deep golden and crisp at the edges. Drain and salt immediately, while they're still glistening.
- Whisk the dosed lime mayo until completely smooth — no oil streaks.
- Dose: Dollop the dosed lime mayo over each serving of hot tostones — 1 tbsp per serving ≈ 69mg → ~9mg per serving. Finish with cilantro and serve with lime wedges.
📐 Dosing Math
- Dosed avocado oil ≈ 2.3mg/ml → 30ml ≈ 69mg total → ~9mg per serving
- Plantains, frying oil, salt, cilantro: all clean. Only the cold lime mayo is dosed.
🧬 Terpene Pairing
- Primary: Limonene (lime juice and zest in the mayo)
- How to use it: Fried plantain is rich and starchy — it needs acid the way a steak needs salt. The limonene in the lime mayo does double duty: it brightens the fry and carries the same citrus note the infusion leans on. Zest the lime into the mayo before juicing it.
🌱 Strain Suggestions
- Lemon Tree (hybrid, ~22% THC) — limonene, beta-caryophyllene. Lemon-diesel snap built for fried food.
- Clementine (sativa-leaning hybrid, ~20% THC) — limonene, myrcene. Sweet citrus that loves salt and crunch.
- Sour Diesel (sativa, ~21% THC) — limonene, beta-caryophyllene. Sharp and gassy, cuts right through the fry.
📏 Dosage
- Per serving: ~9mg THC
- Onset: 60–120 minutes — the fry oil and mayo make this a slow, fat-heavy digest
- First-timer rule: Tostones are the ultimate "one more" food — count your plate before the mayo goes on. Five tostones, one measured tablespoon, then the bowl moves to the other end of the table.

🍌 Chef Smoke's Tostone Rule: "Fry twice, dose once — the second fry is for crunch and the cold mayo is for math."
