Infused Buttercream — The Frosting That Carries the Count

Buttercream is the quiet workhorse of the dosed bakery. It never sees an oven — it is whipped at room temperature, piped cold, and portioned by the cupcake, the slice, the swirl. That makes it the most honest dosing vehicle in the pastry case: the cake bakes clean, the frosting carries the count, and every swirl is the same size because a piping bag does not freelance. This is the technique post for doing it right: the butter blend that keeps the dose even, the math that keeps the number honest, and the storage rules that keep a dosed cake from becoming a guessing game in the fridge.

🔥 Decarboxylation: Wake the Flower Up First

Raw flower will not do the job — the THC is still wearing its acid jacket as THCA, and heat is what takes it off. So before anything gets infused, the flower gets activated:

  • Decarb: 3.5g flower, broken up by hand (never ground to dust), spread on a parchment-lined sheet pan, covered tightly with foil, baked at 240°F for 40 minutes. Cool completely before opening the foil — the good stuff is in the trapped vapor, and you want it in the jar, not in the kitchen air.
  • Why 240°F for 40 minutes: This is the house standard — hot enough to convert THCA to THC reliably, gentle enough to keep the terpene character from boiling off. And here is the buttercream lesson in miniature: the frosting never gets heated at all, so every milligram that goes into the butter stays in the butter.

🧈 The Infusion: Classic Cannabutter

The workhorse infusion, made once and kept for the whole week of baking:

  • Method: Melt 1 cup (2 sticks) unsalted butter with the decarbed flower in a small saucepan or double boiler, hold at 160–180°F for 2 hours, stirring occasionally. Strain through cheesecloth, squeeze gently, and jar.
  • Base: Unsalted butter. Temp: 160–180°F. Time: 2 hours. Yield: About 1 cup (16 tablespoons).
  • Dosing math: 3.5g at 20% THC = 3500mg × 0.20 = 700mg THCA × 0.877 = ~614mg THC × 0.75 efficiency ≈ ~460mg THC per cup of butter → ~29mg per tablespoon, ~10mg per teaspoon.
  • Storage: Fridge 4 weeks, freezer 6 months. Label it clearly: strain, date, mg per teaspoon. Keep it far away from the undosed butter — same foil wrapper, very different job.

🧁 The Technique: Dosed Buttercream, Step by Step

The cake bakes clean — the dose enters only in the frosting, whipped cold and piped by count:

The butter blend (the dosing decision):

  • Never frost with 100% dosed butter unless you have done the math and like the number. The house blend is half dosed, half plain: ½ cup dosed butter + ½ cup plain butter, both at room temperature. Half-and-half keeps the texture perfect and the per-serving number in the sane range — and it means a mistake in one direction only ever halves the dose, never doubles it.

American buttercream (one batch, 24 cupcakes):

  • ½ cup dosed butter + ½ cup plain butter, beaten until pale and fluffy, about 3 minutes
  • 4 cups powdered sugar, added in two batches, beaten low until smooth
  • 2 tablespoons milk or cream + 1 teaspoon vanilla + pinch of salt, beaten in until silky

The piping rule (the dosing instrument):

  • Pipe with the same tip, the same pressure, the same count — a standard star tip, one full swirl per cupcake, 24 identical swirls. A piping bag does not freelance, and that is the whole point: identical swirls mean identical doses. Weigh the bowl before and after if you want to be exact — 24 swirls from one batch means the batch divides by 24, no arguments.

Method:

  1. Bake the cake clean: Bake whatever the frosting is going on — cupcakes, layer cake, loaf — completely undosed. The oven is a no-dose zone, and buttercream never goes in it anyway.
  2. Whip the blend cold: Beat the dosed and plain butters together first, before any sugar goes in, so the dose is evenly distributed through the fat. Sugar added to uneven butter locks the unevenness in — blend the fat first, always.
  3. Pipe by count: Frost 24 cupcakes with identical swirls, or frost a layer cake and cut it into counted slices. Write the number on the box before the box goes in the fridge — a dosed cake with no label is a stranger's problem waiting to happen.

📐 Dosing Math

  • Buttercream batch: ½ cup dosed butter ≈ 230mg THC total
  • Per cupcake: 230mg ÷ 24 swirls ≈ ~10mg THC per cupcake
  • Half a swirl (scrape, don't guess) → ~5mg — where most guests should start
  • Layer cake version: the same batch frosts one 8-inch two-layer cake — cut it into 12 even slices and each slice carries ~19mg, so cut 24 thin slices instead and each carries ~10mg. The slicer is the dosing instrument when the piping bag isn't.
  • The cake, the oven, the cooling rack: all clean. The frosting bowl gets labeled; the cake box gets the number written on it in marker.

🧬 Terpene Pairing

  • Primary terpenes: Limonene (the bright lift that loves vanilla and citrus frostings) + linalool (the soft floral calm that suits a vanilla buttercream) + myrcene (the warm depth under chocolate frosting)
  • How to use it: Match the frosting to the strain — vanilla buttercream wants bright, citrus-lifted strains; chocolate buttercream wants warm, earthy depth. The vanilla already does the camouflage work (those black seeds carry hundreds of aromatic compounds that wrap around any herbal note); the strain just has to agree with the flavor.
  • What to avoid: Heavy diesel or skunk strains in a light frosting — there is nowhere for the flavor to hide in buttercream, and the frosting will tell on you. Keep it bright for vanilla, warm for chocolate, and never louder than the cake.

🌱 Strain Suggestions

  • Super Lemon Haze (Sativa, ~20% THC) — Limonene, terpinolene. Bright citrus lift — vanilla buttercream's best friend.
  • Girl Scout Cookies (Hybrid, ~21% THC) — Caryophyllene, limonene. Sweet spice and earth — chocolate buttercream's mirror.
  • Blue Dream (Hybrid, ~19% THC) — Myrcene, pinene. Gentle herbal warmth — the all-purpose frosting companion.

📏 Dosage

  • Per cupcake: ~10mg THC — a full, real serving; respect it
  • Half cupcake: ~5mg — the sane starting point
  • Onset: 60–90 minutes — the butter absorbs steadily, and the cake carries it long
  • The gentle rule: Nothing in this technique sees heat after the dose enters — the buttercream is whipped cold, piped cold, and stored cold, and it meets the cake on the counter. Anyone who wants an undosed cupcake gets plain frosting before the dosed bowl comes out, and the box gets labeled before it goes in the fridge.

Start with one serving. Wait 90 minutes before even thinking about a second. For adults 21+ only. Consume responsibly and in accordance with local laws.

🧁 Chef Smoke's Buttercream Rule: "The oven is a furnace and frosting never goes in a furnace — that is the whole gift. Blend the fat first, pipe every swirl identical, write the number on the box, and let the frosting do the only job that matters: carry the count where everyone can see it, one swirl at a time."
