Regular butter is a wonderful thing, right up until it is not. Put it in a ripping-hot skillet and it browns, then smokes, then burns — and burnt butter tastes like an apology. Ghee is butter with the milk solids simmered out, and that one change buys you a smoke point around 485°F instead of butter's roughly 300°F. That is the difference between a timid, gray piece of meat and a deep, crackling sear. And when that ghee is dosed, you get the best of both worlds: a sear that can actually sear, and a finish you can count. The rule here is simple — sear in plain ghee, dose the finish off heat.
🧈 Decarb & Infusion (Dosed Ghee)
- Decarb: 7g ground flower spread thin on a lined sheet, 240°F (115°C) for 40 minutes, until fragrant and golden. Cool completely before handling.
- Infusion method: Low-and-slow ghee — decarbed flower + 1 cup plain ghee in a saucepan, 180–200°F for 2 to 3 hours, never simmering. Strain through cheesecloth, press gently. Yield: about 1 cup finished dosed ghee, 16 tablespoons. Because ghee has no water or milk solids left to lose, the yield is nearly the full cup you started with.
- Storage: Refrigerate airtight up to 3 weeks, freeze up to 6 months. Ghee is also shelf-stable for a time at cool room temperature when plain, but dosed ghee always lives in the fridge, labeled and dated, so nobody mistakes it for the everyday jar.
- Dosing math for this batch: 1 tablespoon dosed ghee ≈ 72mg THC, 1 teaspoon ≈ 24mg. The seared-demo plate below uses 1 teaspoon dosed ghee total (≈ 24mg) across 2 servings — about 12mg each.
🥩 The Technique: Sear Hot, Dose Cool
- Why ghee beats butter for searing: Milk solids are what burn. Butter's solids brown fast and then scorch, which caps your pan temperature and fills the kitchen with smoke before the crust ever forms. Ghee, with those solids removed, stays calm at searing heat, so the surface of the meat can actually brown — the Maillard reaction doing its loud, delicious work — without a bitter, burnt-fat backdrop.
- Clarify it right: If you are starting from butter instead of store-bought ghee, melt it gently, skim the foam, and let the milk solids settle and toast lightly at the bottom. Pour off the clear gold and leave every speck of solid behind — a cloudy ghee is just butter that will still smoke.
- The demo plate: Seared ribeye for two — pat two steaks bone-dry (moisture is the enemy of a crust), salt generously, and sear in a screaming-hot cast-iron skillet with plain ghee, about 2 minutes per side, until deeply browned. Rest the steaks. Off the heat, melt 1 teaspoon dosed ghee (≈ 24mg) with a crushed garlic clove and a sprig of thyme, and spoon it over the sliced steaks. The pan does the searing; the dosed ghee does the counting, and it never sees searing heat.
- Never dose the sear itself: Dosed fat in a 450°F pan is dose destroyed and flavor ruined — cannabinoids degrade at sustained high heat, and you cannot count what has burned off. Sear plain, rest, then finish dosed. Every time.
- Beyond steak: This same ghee is a weapon for seared scallops, crispy-skinned chicken thighs, and fried eggs with lacy edges. Anywhere butter would have smoked out, ghee holds the line.
🧬 Terpene Pairing
- Primary terpenes: Beta-caryophyllene (warm, peppery spice that loves a beefy crust), humulene (woody, hoppy depth that suits seared meat), and myrcene (earthy richness that rounds out the nutty note of ghee itself).
- How to use it: A caryophyllene- and humulene-forward strain makes the ghee taste like it belongs on a steak rather than like something added to it. The nutty, toasty character of ghee is already halfway to a steakhouse — let the terpenes walk it the rest of the way.
- What to avoid: Bright, citrusy limonene strains in a searing ghee — they shine in dressings and desserts, but they clash with a hard beef sear.
🌱 Strain Suggestions
- OG Kush — Myrcene, caryophyllene. Earthy and peppery; the steakhouse pick.
- Bubba Kush — Myrcene, caryophyllene. Deep and mellow; made for a resting steak.
- Girl Scout Cookies — Caryophyllene, limonene. Warm spice with a sweet edge; works across seared meats.
📏 Dosage
- Per serving: About 12mg THC per serving in the demo plate (1 teaspoon dosed ghee ≈ 24mg ÷ 2 servings). One serving is half the sliced steak with its share of the finishing ghee.
- Onset: 30–90 minutes. A seared dinner is a slow dinner — sit, rest, and let the plate catch up before deciding anything.
- The spoon rule: Because ghee is liquid gold at room temperature and solid in the fridge, always measure it melted, with a real measuring spoon, never by eye from the jar. A "generous drizzle" is not a dose.
Start with one serving. Wait 90 minutes before even thinking about a second. For adults 21+ only. Consume responsibly and in accordance with local laws.
