Infused Miso-Glazed Salmon — The Pan Stays Clean, the Miso Butter Carries the Count

Miso-glazed salmon is a weeknight luxury: salty-sweet, caramelized at the edges, done in minutes. It is also a dosing trap if you mix the dose into the marinade — marinades coat unevenly, drip off, and spend time in a hot pan. So this salmon marinates clean, sears clean, and meets its dose only at the finish, in a knob of miso butter melted over the fillet off the heat. The pan stays innocent. The butter carries the count.

🔥 Decarboxylation: Wake the Flower Up First

Raw flower will not do the job — the THC is still wearing its acid jacket as THCA, and heat is what takes it off. So before anything gets infused, the flower gets activated:

  • Decarb: 3.5g flower, broken up by hand (never ground to dust), spread on a parchment-lined sheet pan, covered tightly with foil, baked at 240°F for 40 minutes. Cool completely before opening the foil — the good stuff is in the trapped vapor, and you want it in the jar, not in the kitchen air.
  • Why 240°F for 40 minutes: This is the house standard — hot enough to convert THCA to THC reliably, gentle enough to keep the terpene character from boiling off.

🧈 The Infusion: The House Small-Batch Butter

  • Method: Melt 1/2 cup unsalted butter with the decarbed 3.5g flower in a small saucepan or double boiler, hold at 160–180°F for 2 hours, stirring occasionally. Strain through cheesecloth, squeeze gently, and jar.
  • Base: Unsalted butter. Temp: 160–180°F. Time: 2 hours. Yield: About 1/2 cup of dosed butter.
  • Dosing math: 3.5g at 20% THC = 3500mg × 0.20 = 700mg THCA × 0.877 = ~614mg THC × 0.75 efficiency ≈ ~460mg THC per 1/2 cup → ~58mg per tablespoon, ~19mg per teaspoon.
  • Storage: Fridge 4 weeks, freezer 6 months. Label the jar: strain, date, mg per teaspoon. Keep it far away from the undosed butter.

🐟 The Recipe: Miso Salmon, Seared Clean, Finished with Dosed Butter (4 servings, ~10mg each)

For the salmon (clean):

  • 4 salmon fillets (6 oz each), skin on, patted dry
  • 3 tbsp white miso, 1 tbsp mirin, 1 tbsp sake, 1 tsp soy sauce, 1 tsp grated ginger, 1 tsp plain oil for the pan

For the miso butter finish (the dose):

  • 2 tsp dosed butter (~38mg THC total), at room temperature
  • 1 tsp white miso, whisked into the dosed butter until smooth
  • Scallions and sesame seeds, for finishing

Method:

  1. Marinate clean. Whisk the miso, mirin, sake, soy, and ginger; coat the salmon and rest 20 minutes. Nothing dosed is in this marinade — it is a flavor marinade, not a dosing vehicle, and it stays that way.
  2. Sear clean. Wipe off the excess marinade, sear skin-side down in a hot oiled pan for 4 minutes, flip, and cook 2 minutes more until just opaque. Rest the fillets — resting is when the miso butter goes on, not before.
  3. Finish at the table. Divide the dosed miso butter into four equal knobs, about 1/2 teaspoon each, and melt one over each fillet off the heat. The butter melts into the glaze, the glaze carries it evenly, and every fillet gets the same knob.
  4. Count out loud. Plate over steamed rice with pickled vegetables and say the number: ~10mg per serving. The rice stays clean — the butter is the whole story.

📐 Dosing Math

  • Dosed butter: 2 teaspoons ≈ 38mg THC total
  • Four equal knobs → ~10mg per serving
  • Half a knob → ~5mg — the gentle starting point
  • The knob is the scale. Cut the butter, weigh it if you must, and never dose from the jar straight onto the fish.

🧬 Terpene Pairing

  • Primary terpenes: Limonene (bright, lifts the miso's salt), pinene (herbal, clean against the rich fish), myrcene (savory warmth that sits well with fermented miso)
  • How to use it: Fish wants a strain that cleans the palate rather than coating it — citrus and pine notes, not heavy earth.
  • What to avoid: Heavy earthy or diesel strains in a fish butter — they fight the miso instead of joining it, and the fish always loses.

🌱 Strain Suggestions

  • Super Lemon Haze (Sativa-dominant, ~20% THC) — Limonene, caryophyllene. Citrus lift that brightens the miso.
  • Jack Herer (Sativa-dominant, ~19% THC) — Pinene, limonene. Herbal clarity for a clean-tasting fillet.
  • Blue Dream (Hybrid, ~19% THC) — Myrcene, pinene. Gentle warmth — the all-purpose fish-night companion.

📏 Dosage

  • Per serving: ~10mg THC — a full, honest serving; respect it
  • Half a knob: ~5mg — where a first-timer starts
  • Onset: 60–90 minutes — the salmon's fat and the butter carry it steadily
  • The gentle rule: Marinate clean, sear clean, finish dosed. The pan never has to remember anything.

Start with one serving. Wait 90 minutes before even thinking about a second. For adults 21+ only. Consume responsibly and in accordance with local laws.

🐟 Chef Smoke's Salmon Rule: "A marinade is a rumor — it coats, it drips, it lies about how much stayed. A knob of butter is a promise: weighed, melted, counted, one per fillet. Sear clean, finish dosed, and let the butter do the only talking that matters."
