Infused Peppermint Bark — Counted by the Square

Peppermint bark is a holiday classic for one reason: it looks fancy, it tastes like a candy shop, and it takes almost no actual cooking. That is exactly why it is a perfect edible — as long as you respect the count. The trick, as always in this kitchen, is to cook clean and dose the finish. The dark chocolate base sets plain. The peppermint crunch goes on plain. Only the top white chocolate layer carries the dose, and because the bark gets broken into counted squares, every piece carries the same number. No guessing, no "this corner looks stronger." Just snap, count, and serve.

🧈 Decarb & Infusion (Dosed Butter for the Top Layer)

  • Decarb: 7g ground flower spread thin on a lined sheet, 240°F (115°C) for 40 minutes, until fragrant and golden. Cool completely before handling. This is the standard decarb — no shortcuts, no hotter oven, no "just a few more minutes."
  • Infusion method: Stovetop butter — decarbed flower + 1 cup unsalted butter in a saucepan, 180–200°F for 2 hours, never simmering. Strain through cheesecloth, press gently. Yield: about 1 cup finished dosed butter, 16 tablespoons.
  • Storage: Refrigerate airtight up to 3 weeks, freeze up to 6 months. Label it dosed and dated, and keep it far away from the regular butter.
  • Dosing math for this batch: 1 tablespoon dosed butter ≈ 72mg THC, 1 teaspoon ≈ 24mg. The bark below uses 2 tablespoons dosed butter (≈ 144mg total) in the top layer only, cut into 24 squares — about 6mg per square.

🍫 The Recipe: Peppermint Bark, Cooked Clean, Dosed on Top

For the dark base (plain):

  • 12 oz dark chocolate, chopped
  • ½ teaspoon peppermint extract

For the dosed white top layer:

  • 12 oz white chocolate, chopped
  • 2 tablespoons dosed butter (≈ 144mg THC total)
  • ½ teaspoon peppermint extract
  • ½ cup crushed candy canes or peppermint candies

Method:

  1. Line a rimmed baking sheet with parchment. Melt the dark chocolate gently — double boiler or short microwave bursts, stirring often — until smooth. Stir in the peppermint extract, pour onto the sheet, and spread into an even rectangle about ¼ inch thick. Chill until firm, about 20 minutes. This layer is completely plain.
  2. For the top layer, melt the white chocolate gently until just smooth, then take it off the heat. This is the dose-the-finish moment: whisk in the 2 tablespoons of dosed butter until fully melted and glossy. The mixture should be warm, never hot — if it is steaming, let it cool before the butter goes in.
  3. Stir in the peppermint extract, pour the white layer over the firm dark base, and spread evenly to the edges. Immediately scatter the crushed candy canes over the top and press very lightly so they stick.
  4. Chill until completely firm, at least 1 hour. Lift the slab out on the parchment and break — or cut with a warm, dry knife — into 24 even squares. Count them as you go. If a square is twice the size of the others, it is twice the dose, so keep the cuts honest.
  5. Store the squares in a labeled, airtight container in a cool place or the fridge for up to 2 weeks. Keep dosed and plain bark in separate, clearly marked containers — never mixed in the same tin.

🧬 Terpene Pairing

  • Primary terpenes: Menthol-adjacent coolness from the peppermint itself, backed by limonene (bright citrus lift that keeps rich chocolate from feeling heavy) and pinene (a crisp, piney edge that plays beautifully with mint).
  • How to use it: A limonene- or pinene-forward strain keeps this bark tasting clean and bright rather than muddy. The peppermint does the cooling work; the terpenes just keep the chocolate honest.
  • What to avoid: A heavy, earthy myrcene strain here — it fights the mint and makes the bark taste like a garden got into the candy jar.

🌱 Strain Suggestions

  • Super Lemon Haze — Limonene, terpinolene. Bright and citrusy; lifts the chocolate.
  • Jack Herer — Pinene, terpinolene. Crisp and piney; a natural friend to peppermint.
  • Durban Poison — Terpinolene, myrcene. Sweet and clear-headed; keeps the bark lively.

📏 Dosage

  • Per serving: About 6mg THC per square (2 tablespoons dosed butter ≈ 144mg ÷ 24 squares). One square is one serving.
  • Onset: 30–90 minutes, as with any edible. The sugar and fat can make it tempting to keep nibbling — do not.
  • Scaling: Want a stronger square? Do not double the butter in the same layer and hope the chocolate still sets — make a second, separately labeled batch with its own count, or cut the same slab into 12 larger squares (≈ 12mg each) and say so on the label.

Start with one serving. Wait 90 minutes before even thinking about a second. For adults 21+ only. Consume responsibly and in accordance with local laws.

🍫 Chef Smoke's Table Rule: "The dose lives in one layer and the count lives in the cut — a square is a serving, and a serving is a promise."
