Rugelach is the pastry that rewards patience: a cream-cheese dough that bakes up flaky and tender, rolled around a filling of chocolate, cinnamon, and jam. It is also a pastry that rewards counting, because every roll is its own little package. That is the whole method here — bake the rugelach clean, put the dose in the filling, and let each roll carry its own number. Nobody slices a tray and guesses. You take a roll, you know the count, and the tray stays honest.
🧈 Decarb & Infusion (Dosed Butter for the Filling)
- Decarb: 7g ground flower spread thin on a lined sheet, 240°F (115°C) for 40 minutes, until fragrant and golden. Cool completely before handling.
- Infusion method: Stovetop butter — decarbed flower + 1 cup unsalted butter in a saucepan, 180–200°F for 2 hours, never simmering. Strain through cheesecloth, press gently. Yield: about 1 cup finished dosed butter, 16 tablespoons.
- Storage: Refrigerate airtight up to 3 weeks, freeze up to 6 months. Label it dosed and dated, and keep it in a different dish from the regular butter.
- Dosing math for this batch: 1 tablespoon dosed butter ≈ 72mg THC, 1 teaspoon ≈ 24mg. The rugelach below uses 2 tablespoons dosed butter (≈ 144mg total) in the filling, rolled and cut into 24 rolls — about 6mg per roll.
🥐 The Recipe: Rugelach, Baked Clean, Dosed in the Filling
For the dough (plain):
- 2 cups all-purpose flour
- 8 oz cold cream cheese, cubed
- 1 cup cold unsalted butter, cubed
- ¼ teaspoon salt
For the dosed filling:
- 2 tablespoons dosed butter (≈ 144mg THC total), melted and slightly cooled
- ½ cup raspberry or apricot jam
- ½ cup finely chopped dark chocolate
- ½ cup finely chopped toasted walnuts or pecans
- ¼ cup sugar mixed with 1 teaspoon cinnamon
- Egg wash and coarse sugar, for the tops
Method:
- Make the dough clean: pulse the flour, cream cheese, cold butter, and salt together until a dough just forms, or rub it together by hand. Divide into 4 disks, wrap, and chill at least 1 hour. Everything in the dough is plain — the dose is not here.
- Roll one disk into a 10-inch circle on a lightly floured surface. Brush it with a quarter of the melted dosed butter — exactly ½ tablespoon per circle, so the dose spreads evenly across all four — then spread a thin layer of jam, and scatter a quarter each of the chocolate, nuts, and cinnamon sugar.
- Cut the circle into 6 wedges, like a pizza, and roll each wedge from the wide end to the point. Place point-side down on a parchment-lined sheet, curve slightly into a crescent, and brush with egg wash and a sprinkle of coarse sugar. Repeat with the remaining disks. You should have 24 rolls.
- Chill the shaped rolls for 20 minutes so they hold their shape, then bake at 350°F until golden and flaky, about 20 to 25 minutes. Cool on the pan for a few minutes, then transfer to a rack. The oven never sees the dose as a guess — it is already counted, roll by roll, before the tray goes in.
- Store in a labeled, airtight container at room temperature for 2 days or refrigerated for up to a week. Keep dosed rugelach in its own marked tin, never mixed with a plain batch.
🧬 Terpene Pairing
- Primary terpenes: Beta-caryophyllene (warm spice that loves cinnamon), limonene (a bright lift that keeps jam fillings from feeling heavy), and linalool (a soft floral note that suits a delicate pastry).
- How to use it: A caryophyllene-forward strain leans into the cinnamon and chocolate, while a touch of limonene keeps the jam bright. The pastry is rich — the terpenes should season it, not weigh it down.
- What to avoid: Heavy, skunky strains that overpower a delicate cream-cheese dough. Rugelach is a whisper of a pastry; do not shout over it.
🌱 Strain Suggestions
- Girl Scout Cookies — Caryophyllene, limonene. Warm spice and sweetness; born for a cinnamon filling.
- Wedding Cake — Caryophyllene, limonene. Rich and vanilla-sweet; flatters the dough.
- Zkittlez — Caryophyllene, linalool. Fruity and soft; a natural match for a jam filling.
📏 Dosage
- Per serving: About 6mg THC per roll (2 tablespoons dosed butter ≈ 144mg ÷ 24 rolls). One roll is one serving.
- Onset: 30–90 minutes. Rugelach are small and dangerously easy to eat by the handful — count the rolls on your plate before you start, not after.
- The tray rule: Serve dosed rolls on their own platter, plainly labeled, with the per-roll count on the card. A mixed platter is a miscount waiting to happen.
Start with one serving. Wait 90 minutes before even thinking about a second. For adults 21+ only. Consume responsibly and in accordance with local laws.
🥐 Chef Smoke's Table Rule: "Bake it clean, dose the filling, count the roll — every crescent is a serving, and every serving is a promise."
