Step by Step:
1 Decarb cannabis flower (see Decarboxylation steps above).
2 Place 2 tbsp coconut oil in a small saucepan or double boiler.
3 Add the decarbed cannabis flower to the oil. Stir gently to combine.
4 Warm over low heat until mixture reaches 160F. Maintain temperature, do not exceed 160F.
5 Simmer gently at 160F for 45 minutes, stirring occasionally.
6 Remove from heat. Strain through a fine mesh strainer or cheesecloth into a clean bowl.
7 Discard plant material. Blend infused coconut oil with olive oil and balsamic vinegar for the marinade.

3 Preheat your oven to 425°F. This high temperature creates caramelized edges on the portobello while keeping the centers meaty and tender. Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
4 Clean the portobello mushrooms with a damp cloth or brush. Remove the stems and gills if desired. Cut into bite-sized cubes. Even pieces ensure uniform cooking. Pat dry thoroughly with a clean towel to remove surface moisture for better browning.
5 Whisk the infused oil with the olive oil, balsamic vinegar, and chopped fresh thyme in a large bowl until well combined. The marinade should be glossy and aromatic. Add the portobello cubes to the bowl and toss gently until every piece is evenly coated. The oil and vinegar help the seasoning stick and promote caramelization during roasting.
6 Spread the coated portobello in a single layer on the prepared baking sheet. Do not overcrowd or they will steam instead of roast. Give each piece a little space for air circulation.
