Full Recipe Steps

 * Whisk 3 eggs, 1 tablespoon heavy cream, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a bowl until no streaks of white remain.

 * Place a small non-stick skillet over medium-low heat.

 * Add 1 tablespoon infused butter and 1 tablespoon non-infused butter to the pan.

 * Allow butter to melt and begin to foam. Add the sliced sage leaves.

 * Cook until the butter turns a golden amber color and smells nutty, approximately 3 minutes.

 * Pour the egg mixture into the pan. Use a rubber spatula to gently push the cooked edges toward the center, tilting the pan to let raw egg fill the space.

 * When the eggs are mostly set but still slightly moist on top, sprinkle 1/4 cup Gruyère cheese over one half.

 * Fold the omelet in half and hold for 30 seconds to melt the cheese.

 * Slide onto a warm plate and serve immediately.
