• 5 g dried cannabis flower
• 1½ cups raw wildflower honey
• Zest of 1 orange
• Zest of 1 lime
• ½ tsp dried chili flakes (Aleppo or Calabrian preferred)

STEP 1 — DECARBOXYLATION

1. Preheat oven to 240°F / 115°C.
2. Break cannabis into small pea‑size pieces (do not grind).
3. Spread on parchment‑lined tray.
4. Cover loosely with foil.
5. Bake 40 minutes, gently shaking once halfway.
6. Cool completely.
Purpose: Converts THCA → THC without burning delicate aromatics.

STEP 2 — HONEY INFUSION

1. Add honey to a heat‑safe jar or saucepan.
2. Place jar in a water bath or use a double boiler.
3. Warm honey to 160–170°F (70–75°C).
4. Stir in decarbed cannabis, citrus zest, and chili flakes.
5. Maintain temperature for 2 hours, stirring gently every 15 minutes.
6. Do NOT exceed 180°F.
7. Remove from heat and steep 10 minutes.
8. Strain through fine mesh or cheesecloth.
9. Cool and bottle airtight.
Chef note: Honey captures citrus terpenes beautifully while softening herbal notes.
