INGREDIENTS

DECARB & INFUSION

• 7 g dried cannabis flower (¼ oz)

• 1 cup unsalted European‑style butter

• 1 cup water


COMPOUND BUTTER

• ¾ cup cannabis‑infused butter (softened)

• 1½ Tbsp white miso paste

• 1½ Tbsp pure maple syrup

• ½ tsp flaky sea salt

• Optional: ½ tsp rice vinegar (brightness)

STEP 1 — DECARBOXYLATION

────────────────────────

1. Preheat oven to 240°F / 115°C.

2. Break cannabis into small pieces (do not grind).

3. Spread evenly on parchment‑lined tray.

4. Cover loosely with foil.

5. Bake 40 minutes, gently shaking once halfway.

6. Cool completely.


Purpose: Activates cannabinoids while minimizing terpene loss.

STEP 2 — BUTTER INFUSION

1. Add butter and water to saucepan or double boiler.

2. Melt gently on LOW heat.

3. Add decarbed cannabis.

4. Maintain 160–180°F (70–82°C).

5. Simmer gently for 2½–3 hours, stirring occasionally.

6. Do NOT boil.

7. Strain through cheesecloth into heat‑safe container.

8. Refrigerate until butter solidifies.

9. Remove butter from water layer and pat dry.


Chef note: Water traps plant solids and prevents scorching, resulting in a cleaner‑tasting butter.

STEP 3 — COMPOUND BUTTER

1. In bowl, combine softened infused butter, miso, maple syrup, salt, and vinegar (if using).

2. Whip gently until smooth and fully integrated.

3. Taste and adjust salt or sweetness.

4. Spoon onto parchment; roll into log.

5. Chill until firm.

6. Slice into 1 Tbsp coins for serving.


Flavor goal: Savory first, subtle sweetness second, deep umami finish.

ASSUMPTIONS:

• Decarb efficiency: 90%

• Infusion efficiency: 70%


EXAMPLE:

• 7 g flower @ 15% THC

• 7 × 0.15 × 1000 = 1050 mg

• 1050 × 0.90 = 945 mg

• 945 × 0.70 = 662 mg per cup butter


RECIPE USE:

• ¾ cup infused butter ≈ 497 mg THC total

• 12 Tbsp servings ≈ 41 mg THC per Tbsp


BEGINNER DOSE:

• ¼ Tbsp (~10 mg THC) or less

• Wait 2 full hours before increasing
