INGREDIENTS

DECARB & CREAM INFUSION

• 5 g dried cannabis flower

• 2 cups heavy cream

• 1 vanilla bean, split and scraped


PANNA COTTA BASE

• Infused vanilla cream (from above), strained

• ¼ cup granulated sugar

• 2¼ tsp powdered gelatin

• 3 Tbsp cold water

• Pinch fine sea salt


OPTIONAL PLATING

• Fresh berries or citrus segments

• Honey drizzle or berry coulis

STEP 1 — DECARBOXYLATION

────────────────────────

1. Preheat oven to 240°F / 115°C.

2. Break cannabis into pea‑size pieces (no grinding).

3. Spread evenly on parchment‑lined tray.

4. Cover loosely with foil.

5. Bake 40 minutes, shaking once halfway.

6. Cool completely.


Purpose: Activates cannabinoids while preserving aromatic compounds.

STEP 2 — VANILLA CREAM INFUSION

1. Add cream, vanilla bean pod, vanilla seeds, and decarbed cannabis to saucepan.

2. Heat gently to 160–175°F (70–80°C).

3. Hold temperature for 2 hours; do NOT boil.

4. Remove from heat and steep 15 minutes.

5. Strain finely to remove plant material and pod.

6. Measure infused cream to ensure full 2 cups.


Chef note: Cream produces a rounder, calmer flavor than butter and shines in delicate desserts.

STEP 3 — PANNA COTTA

1. Bloom gelatin in cold water for 5 minutes.

2. Warm infused cream with sugar and salt just until sugar dissolves.

3. Remove from heat; whisk in bloomed gelatin until smooth.

4. Pour into serving molds or glasses.

5. Chill uncovered 4 hours or until fully set.


Texture goal: Soft wobble, not stiff.

• Flower: 5 g @ 15% THC

• Decarb efficiency: 90%

• Infusion efficiency: 65%


Calculation:

• 5 × 0.15 × 1000 = 750 mg THC

• After decarb: 675 mg

• After infusion: ~440 mg total


PER SERVING:

• 440 mg ÷ 6 ≈ 7 mg THC per portion


BEGINNER DOSE:

• Start with ½ portion (~3–4 mg)

• Wait 2 full hours before increasing
