• 5 g dried cannabis flower

• ¾ cup high‑quality extra‑virgin olive oil


RICOTTA BASE

• 15 oz whole‑milk ricotta

• 3 Tbsp cannabis‑infused olive oil

• 1 Tbsp regular olive oil

• 1 small head garlic

• Zest of 1 lemon

• 1½ Tbsp fresh lemon juice

• ½ tsp kosher salt (adjust to taste)

• Fresh cracked black pepper


OPTIONAL FINISH

• Fresh herbs (thyme, basil, or chives)

• Chili oil or honey drizzle (non‑infused)

STEP 1 — DECARBOXYLATION

1. Preheat oven to 240°F / 115°C.

2. Break cannabis into small pieces (no grinding).

3. Spread evenly on parchment‑lined tray.

4. Cover loosely with foil.

5. Bake 40 minutes, gently shaking once halfway.

6. Cool completely.


Purpose: Activates cannabinoids while preserving aromatic compounds.

STEP 2 — OLIVE OIL INFUSION

1. Add olive oil and decarbed cannabis to a saucepan or double boiler.

2. Heat gently to 160–175°F (70–80°C).

3. Maintain temperature for 2½ hours, stirring occasionally.

4. Do NOT allow oil to simmer or fry.

5. Remove from heat and cool slightly.

6. Strain through fine mesh or cheesecloth.

7. Store sealed in a cool, dark place.

2. Stream in 3 Tbsp infused olive oil + 1 Tbsp regular olive oil.

3. Process 1–2 minutes until ultra‑smooth and airy.

4. Taste and adjust seasoning.


Texture goal: Cloud‑like, glossy, spreadable.

BEGINNER DOSE:

• 1 serving (≈ 3–4 mg THC)

• Wait 2 full hours before increasing
