Instructions

Sear ribs in hot pan 4 minutes per side then transfer to oven at 325°F for 3 hours, Flow tip: sear creates flavorful crust.

Reduce wine and stock with herbs 20 minutes, Flow tip: simmer low to concentrate flavors without bitterness.

Strain jus and spoon over rested ribs, Flow tip: rest meat 10 minutes for juiciest results.

Decarboxylation

Temperature 240F / 115C. Time 40 minutes. Cannabis 5.0g. Standard decarb in oven. Flower will be used to infuse the jus for the short rib.

Infusion

Method Infused Red Wine Jus. Base red wine and stock (2 cups total). Temperature 160F. Time 120 minutes. Yield 1 cup. Storage refrigerate up to 1 week.

Combine decarbed cannabis with wine reduction.

Add stock and herbs then simmer gently.

Strain through cheesecloth for silky texture.
