Heavy cream 1 1/2 cups 20 percent DV Vitamin A

Sugar 1/4 cup 8 percent DV

Orange zest 2 tablespoons 25 percent DV Vitamin C

Instructions

Melt chocolate then temper with yolks, Flow tip: cool mixture before folding cream to lock terpenes.

Whip cream to soft peaks, Flow tip: gentle incorporation for volume.

Pipe mousse and top with infused zest, Flow tip: chill for set texture.

Decarboxylation

Temperature 240F / 115C. Time 40 minutes. Cannabis 6.8g. Standard decarb in oven. Flower will be used to infuse the orange zest for the mousse.

Infusion

Method Infused Orange Zest. Base: orange zest sugar and cream (1 cup total). Temperature 150F. Time 45 minutes. Yield 1 cup. Storage refrigerate up to 3 days.

Warm zest with sugar.

Add decarbed flower.

Steep then strain into cream.
