Ingredients

Infused Caper Lemon Emulsion 3 tablespoons served warm 30 percent DV Vitamin C

Branzino fillets 1 lb skin on 55 percent DV Protein

Lemon juice 1/4 cup 25 percent DV Vitamin C

Capers 2 tablespoons 5 percent DV

Olive oil 3 tablespoons 35 percent DV Total Fat

Garlic 1 clove minced 5 percent DV

Parsley 1/4 cup chopped 10 percent DV Vitamin K

Salt and pepper to taste 6 percent DV Sodium

Instructions

Pat fish dry and sear skin side down in hot skillet (400°F) for 5 minutes. Flow tip: Press gently for even crisp.

Flip and cook 3 minutes at 380°F. Flow tip: Baste with emulsion for flavor infusion.

Whisk emulsion ingredients off heat, spoon over fillets. Flow tip: Emulsify vigorously for stable sauce.

Decarboxylation

Temperature 240F / 115C. Time 40 minutes. Cannabis 5.5g. Standard decarb in oven. Flower will be used to infuse the oil for the caper lemon emulsion.

Infusion

Method Infused Caper Lemon Emulsion. Base olive oil 3 tablespoons and lemon juice total 1/2 cup. Temperature 160F. Time 25 minutes. Yield 1/2 cup. Storage refrigerate up to 1 week.
