Cannabis Gummies: Pectin vs Gelatin Complete Guide

Cannabis Gummies: Pectin vs Gelatin

Pectin = vegan, shelf-stable, fruity texture. Gelatin = chewy, fast set, melts in heat. Choose the right base for your gummies.

Pectin vs Gelatin: Key Differences

Pectin is plant-based (from fruit), gelatin is animal-based (from collagen). This changes everything: texture, melting point, shelf life, and vegan status. Commercial gummies use pectin for a reason.

Pectin Gummies

Source Citrus/apple peel
Vegan Yes
Texture Firm, short bite
Melting point 185°F (won't melt)
Set time 2-4 hours
Shelf life 6-12 months
Difficulty Medium (pH sensitive)

Best for: Commercial-style, vegan, hot climates, long storage

VEGAN
SHELF STABLE

Gelatin Gummies

Source Animal collagen
Vegan No
Texture Chewy, elastic
Melting point 95°F (melts easily)
Set time 30-60 minutes
Shelf life 2-4 weeks (fridge)
Difficulty Easy

Best for: Home use, fast, chewy texture, cold storage

EASY

Pectin Gummy Recipe (Vegan, Shelf-Stable)

Yield: ~100 gummies (10mg each). Uses HM pectin (high methoxyl), requires sugar and acid to set. More technical but professional results.

Ingredients

IngredientAmountNotes
Fruit juice1 cup (240ml)Apple, grape, or berry (no pineapple)
Granulated sugar1 1/4 cup (250g)Required for pectin set
Corn syrup1/4 cup (60ml)Prevents crystallization
HM Pectin3 tbsp (27g)Not low-sugar pectin
Citric acid1 tspDissolved in 1 tbsp water
Cannabis oil1/4 cup (60ml)~1000mg THC (MCT or coconut)
Sunflower lecithin1 tspEmulsifier (critical)
Sodium citrate1/4 tspOptional, prevents weeping

Method

1. Prep

Mix pectin with 1/4 cup sugar (prevents clumping). Heat juice to 140°F. Have molds ready, lightly oiled.

2. Bloom pectin

Whisk pectin-sugar into warm juice. Bring to boil, stirring constantly. Boil 1 minute.

3. Add remaining sugar

Add remaining sugar and corn syrup. Return to boil. Cook to 220-225°F (thread stage). Use candy thermometer.

4. Add oil

Remove from heat. Cool to 190°F. Whisk in cannabis oil + lecithin vigorously 60 seconds until emulsified.

5. Acidify

Add citric acid solution, stir 10 seconds. Work fast - pectin sets quickly once acidified.

6. Mold

Immediately pour into molds using squeeze bottle or pipette. Work quickly, mixture sets in 3-5 minutes.

7. Cure

Let set at room temp 2-4 hours. Unmold, toss in 1:1 sugar:citric acid mix. Cure 24-48 hours uncovered to dry.

Pros
  • Vegan, allergen-free
  • Won't melt in heat
  • 6-12 month shelf life
  • Professional texture
  • Clear, jewel-like appearance
Cons
  • pH sensitive (need thermometer)
  • Sets fast (must work quickly)
  • Requires corn syrup
  • Can weep if humidity high
  • More expensive

Gelatin Gummy Recipe (Easy, Chewy)

Yield: ~80 gummies (10mg each). Classic gummy bear texture. Easier than pectin, sets fast, but melts in heat and needs refrigeration.

Ingredients

IngredientAmountNotes
Fruit juice1/2 cup (120ml)Any flavor
Gelatin (unflavored)3 tbsp (21g)Knox or beef gelatin
Honey or corn syrup1/4 cup (60ml)Sweetener
Cannabis oil1/4 cup (60ml)~1000mg THC
Sunflower lecithin1 tspEmulsifier
Citric acid1/2 tspOptional, for sour

Method

1. Bloom gelatin

Pour juice into saucepan, sprinkle gelatin over top. Let sit 5 minutes to bloom.

2. Heat

Heat on low, stirring until gelatin dissolves (about 5 min). Do not boil - destroys gelatin.

3. Add sweetener

Stir in honey/corn syrup until dissolved.

4. Add oil

Remove from heat. Cool to 160°F. Whisk in cannabis oil + lecithin vigorously 60 seconds.

5. Add acid

Stir in citric acid if using.

6. Mold

Pour into molds. Refrigerate 30-60 minutes until firm.

7. Store

Unmold, toss in cornstarch to prevent sticking. Store in fridge in airtight container.

Pros
  • Very easy, foolproof
  • Fast set (30 min)
  • Chewy, familiar texture
  • Cheap ingredients
  • No thermometer needed
Cons
  • Not vegan
  • Melts above 95°F
  • Short shelf life (2-4 weeks)
  • Must refrigerate
  • Can get rubbery

Troubleshooting

Pectin Problems
  • Won't set: Not enough acid, didn't reach 220°F, or wrong pectin type
  • Too soft: Undercooked, need higher temp
  • Weeping: Humidity too high, add sodium citrate next time
  • Grainy: Sugar crystallized, need corn syrup
  • Separated: Didn't emulsify oil enough, use lecithin
Gelatin Problems
  • Won't set: Not enough gelatin, or boiled (destroys it)
  • Too rubbery: Too much gelatin
  • Melting: Normal above 95°F, must refrigerate
  • Sticky: Need cornstarch coating
  • Separated: Oil not emulsified, add lecithin
Both Types
  • Weak potency: Oil not mixed well, use immersion blender
  • Uneven dosing: Pour quickly, stir constantly while filling molds
  • Mold: Too much moisture, cure longer, store with desiccant
  • Bitter taste: Too much citric acid or chlorophyll in oil

Dosing Math

Formula: (Oil mg THC) ÷ (Number of gummies) = mg per gummy. Always test one gummy and wait 2 hours before taking more.

Example Calculation

StepCalculationResult
Oil potency1/4 cup oil @ 4000mg/cup1000mg THC total
Number of gummiesUsing standard bear mold~100 gummies
Mg per gummy1000 ÷ 10010mg each
Loss factorAccount for 10% loss~9mg actual
Pro Tip: Always make a test batch without cannabis first to perfect your technique. Pectin is unforgiving - once it sets, you can't remelt it. Gelatin can be remelted if you mess up.

Pectin = vegan, shelf-stable, 185°F melt point. Gelatin = chewy, easy, 95°F melt point. Use pectin for commercial quality, gelatin for home use.
