Creamy pandan-infused coconut panna cotta delivers Southeast Asian aromatic elegance with cannabis coconut milk for silky chilled dessert.

Ingredients

2 cups coconut milk infused

1/4 cup sugar

2 tsp powdered gelatin

1 tsp pandan extract

Pinch salt

Toasted coconut for garnish

Instructions

Sprinkle gelatin over 1/4 cup cold water in small bowl and let bloom 5 minutes until fully hydrated and spongy; prepare double boiler with simmering water below.

In saucepan combine infused coconut milk, sugar, pandan extract and salt; heat gently over medium-low stirring constantly with wooden spoon until sugar dissolves and mixture reaches 160F (do not boil or it will curdle).

Remove from heat; add bloomed gelatin and whisk vigorously 1 minute until completely dissolved and smooth with no lumps visible.

Strain through fine mesh sieve into 6 ramekins or glasses; cool to room temperature then refrigerate uncovered 4 hours until firmly set and wobbly when gently shaken.

Serve chilled topped with toasted coconut; run knife around edge if needed to unmold.

Decarboxylation

Temperature 245F / 118C. Time 35 minutes. Cannabis 12g. Standard decarb in oven. Flower will be used to infuse the coconut milk.

Infusion

Method Infused coconut milk. Base coconut milk total 2 cups. Temperature 160F. Time 25 minutes. Yield 2 cups. Storage refrigerate up to 1 week.

Place decarbed cannabis and coconut milk in heat-safe jar inside double boiler over low heat.

Maintain exact 160F stirring every 5 minutes with thermometer check for 25 minutes until fragrant and slightly thickened; remove from heat.

Strain through cheesecloth-lined sieve pressing gently to extract liquid; discard solids and cool before using.
